Ingredients
- 2 oz bourbon
- ½ oz pure maple syrup, preferably Grade A Dark
- 2–3 dashes Angostura bitters
- 1 large ice cube
- 1 strip of orange peel
- A small pinch of Heritage Oak or Toasted Walnut chips
Make the cocktail
- Add the bourbon, maple syrup and bitters to a stable rocks glass with the large ice cube.
- Stir until the syrup is fully mixed and the glass feels cold.
- Rest the disc on the rim and place the barrel horizontally on top. Lift away the upper half and spread the chips over the screen.
- Light the chips with the butane torch, removing the flame once they smoulder. Let the smoke collect for about 30 seconds.
- Lift the smoker. Twist the orange peel over the glass, add it to the drink and serve.
